{Dinner} Thai Chicken Curry in Coconut Milk


I haven't shared a recipe in a while. There is still a ton of cooking going on in this household though.

Any who, this dish was so delicious. I cannot wait to make it again!


You will need:


Cooking Spray

Curry Paste

Chicken Breast {Cut into strips}

Onion

Green bell pepper {Or red}

Lemon zest {1 tablespoon}

1 cup of coconut milk

1 tablespoon of fish sauce

1 tablespoon of fresh lemon juice



Heat cooking spray in skillet over high heat. Heat the curry paste in the spray for 30 seconds. Add the chicken and cook for 3 minutes.



Stir in the onions, bell peppers, lemon zest, coconut milk, fish sauce and lemon juice and bring to a boil.




Cook until the chicken is cooked through about 5-7 minutes. Serve over rice {I used Jasmine Rice}. And enjoy.


And try this hot sauce. It is incredible. We put it on pretty much everything we can.

  3. @Eesh: I've never used curry powder before but I have a feeling that it would work the same way as the paste.

    I wonder if fish sauce has shellfish in it? I'm allergic, but maybe they don't put any little shrimpies or crab stuff in there.
    My mother-in-law is here & we got take out so that was so nice not to have to cook :) Doesn't happen that way often!

  6. Looks awesome and best of all - easy! I love the "Rooster" hot sauce! I can't pronounce the real name - but everyone always knows what I'm talking about when I call it the "Rooster Sauce". LOL

  15. I have made something very similar in the crock pot. I added sweet potatoes and omitted peppers since I hate them lol. It was freakin delicious! One of our fav meals :)

  16. Looks good!!! Yum! I make this too! I put my sriracha chilli hot sauce right into the pot while it's cooking too lol.

    Tip: when you're making your rice, try using a can of coconut milk and the rest water if you need it, instead of just water or broth. Adds a nice coconutty vibe to the rice to go with the curry. YUMMMM
