{Dinner} My Version of a Spinach Lasagna


You will need:

* box of lasagna noodles
* lb of ground beef
* 1 cup chopped fresh mushrooms
* 1 cup chopped onion
* 1 cup chopped green peppers
* 1 tablespoon minced garlic
* box of frozen spinach
* shredded mozzarella cheese {we don't like ricotta cheese in our residence}
* 1 cup of 4 cheese blend {ran out of mozzarella cheese but it was delish!}
* 1 teaspoon dried oregano
* 1 teaspoon dried basil
* jar of tomato pasta sauce
* sea salt and black pepper to taste

1. Cook the frozen spinach using the directions on the box

2. Spray cooking spray on your skillet & heat on medium - low.

3. Place mushrooms in skillet when warmed up. Cook mushrooms for 3-4 minutes on each side.


4. Chop onions, garlic and green peppers and add to skillet.


5. Add ground beef to vegetables and season with oregano, basil and black pepper.


6. At this time your pot of water should be boiling to cook the lasagna noodle

7. Once meat is browned, drain meat and then add jar of pasta sauce in skillet




8. Place lasagna in the bottom of a lasagna pan {make sure that lasagna is 90% cooked, it helps shorten cooking time in the oven}


9. Add the meat sauce on top of lasagna noodles


10. Add cooked spinach on top of sauce


11. Add shredded mozzarella cheese, 4 cheese blend and pre-heat oven to 350 degrees



12. Place lasagna pan in 350 degree oven and pull out of oven in 15 minutes or until cheese is melted


13. Enjoy!

  2. yummy! coincidentally i had lasagna tonight but i didn't make it they were left overs from my sister's bbq. we def should incorporate lasagna into our dinners it's such a great dish and there's always extra for lunch/leftovers. thanks for your sweet comments lady!

  11. I appreciate this recipe for more than 1 reason. #1 because it doesn't use ricotta, which I dont like. And #2 because it's meatless!! Love spinach lasagna, but never made it, just buy it frozen from trader joes. This looks really good, and def going to try!
