{Recipe} White Chicken Enchilada Pasta

I found this recipe not too long ago and knew that I had to make it.
I try to cook a pasta meal for us once a week since Sean loves it and to be honest I love it too.
I don't think I could ever remove pasta from our lives but I tricked Sean into liking whole grain pasta so that's something.
Any who ...

Ingredients:

12 oz penne pasta
12 oz cooked chicken, chopped
1 (4oz) can green chiles
2 cups shredded Monterey Jack cheese
3 Tbsp butter
3 Tbsp flour
1/2 tsp onion powder
1/2 tsp garlic powder
1 tsp southwestern seasoning
2 cups chicken broth
1 cup sour cream

Directions:

Preheat oven to 350 degrees. Spray a 9x13 pan with cooking spray.

Cook pasta according to package directions. Drain and set aside.

In a small sauce pan over medium heat, melt butter. Whisk in flour and cook 1 minute. Add broth, garlic powder, onion powder and southwestern seasoning. Whisk until smooth. Allow sauce to thicken. Remove from heat and stir in sour cream and chilies

Toss together pasta, sauce, chicken and half of cheese. Pour into prepared pan. Top with remaining cheese.

Bake 25-30 minutes, until bubbly and cheese is melted.

It is delicious but the first time I made it, it was spicy! I made a bit, OK a big mistake. The recipe calls for Southwest Seasoning and I did not have any so like any sane person I googled the recipe for Southwest Seasoning and came across Emeril's Southwest Seasoning. The problem was that his recipe makes 1/2 a cup of Southwest Seasoning and the recipe only calls for 1 tsp of it. I'm thinking you already know what I did but I'll share anyway. I used ALL of it.

It wasn't the worst thing I've ever made or tasted but I knew I had to give it another shot because even with my mistake it was good. This really means that we ate it with tissues nearby hoping that we wouldn't have insane heartburn.

To ensure that you see my mistake I have provided several pictures below. The one on top and right below this is the way the meal should look. The bottom two pictures are the first time I made it. Do you see the differences in color?! So bad. But kinda good. I don't know.

So yeah, things don't always go perfect in my kitchen but I'm working on that.

  5. This looks really good! We've made the switch to whole wheat pasta. I can't tell a difference and I feel a little better knowing that it's slightly healthier. Thanks for sharing the recipe :)

  17. This sounds so cool! Do you think it would still be good without chicken? Also, when you made it the second time how spicy was it? I think the first time would have been too much for me, but I do like spicy foods.
