Yes, yes I know. I've shared a Mac & Cheese recipe on the blog before but I've come to the conclusion that one can never share too many mac & cheese recipes. Besides, I think you're going to love me even more after you make this and if you don't something is seriously, seriously wrong with you ;). I mean, it's basil and tomatoes added to mac and cheese. It's freaking brilliant AND delicious!
Ingredients:
8 oz dry elbow macaroni
2 Tbsp butter
2 Tbsp all-purpose flour
1 1/4 cups milk
1/2 cup cream
8 oz fresh mozzarella, grated
Salt and freshly ground black pepper, to taste
2 Roma tomatoes, diced
3 Tbsp chopped fresh basil
Directions:
Cook pasta according to directions listed on package to al dente. Drain pasta. In a medium saucepan, melt butter over medium heat. Once butter has melted, add in flour and cook, whisking constantly, 1 minute. Slowly pour in milk and cream while whisking. Increase heat to medium-high and bring mixture just to a boil, stirring constantly, then reduce heat to low. Stir in fresh mozzarella, and cook, stirring constantly until melted. Season with salt and pepper to taste. Toss in drained pasta and let rest over warm heat for 2 - 3 minutes. Plate pasta and top with diced tomatoes and fresh basil.

ReplyDeleteI love Mac & cheese. The best one I've had in life was a truffle Mac followed with a close 2nd of crawfish Mac oh & I make a mean bacon Mac as well. And now I'm hungry..... Lol

ReplyDeleteI used to love mac and cheese and then about a year ago it started tasting really gross and processed to me no matter what type I tried. I finally (recently) made a baked mac and cheese recipe that I love - it's really so good :) I haven't heard of mac and cheese being made with mozzarella before. I love that this one includes tomatoes and basil. I think that would really freshen it up! I might have to try this one!
