{Recipe} Wannabe Panera Bread's Broccoli Cheddar Soup

I'm thinking that everyone needs a break from the Seattle posts.
I don't want y'all to get burned out but to be honest, I'm just being lazy.
We'll return to Seattle next week.
So why don't we pause for a recipe?

I'm sure I'm like the rest of the world that is obsessed with Panera Bread's Broccoli Cheddar soup.
Every time I go, without fail, I order that soup.

I decided to try to find the recipe online and came across this one on I have to say that it was rather good. I'm not going to lie and say that it is better than the original (or really taste like the original) because it is not but it is a fair alternative. I like that I get to control how I prefer the broccoli's consistency in this recipe since I love to bite into nice mouthfuls of broccoli in my soup. I also found that I didn't really care for the nutmeg in the recipe but Sean loved it so I think it's just a matter of taste in this department.

I'm excited to make it again (without nutmeg, sorry Sean, you can add it after) when the craving hits but don't you worry Panera, you'll still get my business every now and then.

1 tablespoon melted butter
1/2 medium chopped onion
1/4 cup melted butter
1/4 cup flour
2 cups half-and-half cream
2 cups chicken stock
1/2 lb fresh broccoli
1 cup carrot, julienned
1/4 teaspoon nutmeg
8 ounces grated sharp cheddar cheese
salt and pepper

1. Sauté onion in butter. Set aside.

2. Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and add the half & half.

3. Add the chicken stock. Simmer for 20 minutes.

4. Add the broccoli, carrots and onions. Cook over low heat 20-25 minutes.

5. Add salt and pepper. It can now be puréed in a blender if you prefer but I did not do this since I love chunks of veggies in my soup.

6. Return to heat and add cheese. Stir in nutmeg.

7. Stuff your pie hole! At least that is what I did. You can choose to skip this step ;).

  1. I've never had broc + cheddar soup before! Looks delish! :) Perfect for this terrible weather we have been having. BUT I shouldn't complain since its not snowing, right? lol

  2. This looks easy and yummy! I think I just might try to make it this weekend if I can gather all the ingredients.

    Thanks for sharing!

  3. Hubby loves Panera's brocolli and cheddar soup. I'll have to try this one out on him! Thanks for being so honest that it isn't an exact Panera match- lol. I wonder if Hubby will notice ;-)

  4. Ooh, I love Panera but have yet to try this soup. I usually go for black bean or creamy tomato, which I love. Maybe I'll give this a try next time!

  5. This looks so yummy! Great photos ;)

  6. This looks so yummy! Great photos ;)

  8. Why for the love of all things yummy WHY is everyone posting about food today? Is it not enough that I am salivating from halfway across the world? Why do you torture me so?! Gosh that look so good. I'm like... sigh... I'm coming over for dinner Faith. Just save me a spot between the kitty and the cutie and NO I'm not talking about Sean this time.

Ok joke aside...that really looks good. I've never had it before or...actually I don't even know what Panera is! Sad, I know. So I'll be trying your recipe. Hopefully someone eats it -_-

  9. So I just discovered that I like broccoli cheddar soup about 2 years ago and now I'm obsessed with it!! Honestly, my most fav is Outback's....OMG it is so amazing. I want to try and find a really good recipe to make because I crave this soup!

  12. Okay so this is a recipe I am REALLY excited to try! I love lots of broccoli in my soup (and not as many carrots) so I am looking forward to having the chance to enjoy some of that Panera taste with my own spin on things!

Thanks for passing this along, Faith! :)

  13. Skip stuffing our pieholes!? Are you crazy Faith!? Haha I don't think it's lazy to post food photos and a recipe (at all.) However you did succeed in making me a bit hungry before bed!! xo

  16. I just had Panera's broccoli cheddar this weekend. Had I known the soup is so easy to make I would have had it at home instead. Adding this to my "need to make for dinner" list!

  17. Okay - made this soup on Saturday with my girlfriend and our hubbies approved of it! Like you said, not exactly like Panera, but a yummy substitute. I pureed half of it in a blender, then mixed it all together and it was delicious! Next time I may try using extra sharp cheddar cheese. Thanks for posting the recipe!

  18. Ooh, Faith. Mouth. Is. Watering. I must go to Panera bread and try this soup! But first I will try the awesome recipe. Looks delicious....and I always prefer homemade anyways:)!
