{Dinner} Penne Vodka Sauce


I just finished cooking dinner and Sean's gifts. I got the idea from one of my blogger friends and I can't wait for Sean to get it. It is mushy and funny at the same time. At least, our kind of funny. I love it!

Any who, tonight I made Penne Vodka Sauce with Baked Chicken. Yum! Yum! Yum!

Again, no idea who I stole this from. But if it's yours please let me know and I'll credit you!

You'll need:

1 lb of Penne Pasta
1 28 oz can of diced tomatoes
1/2 cup of heavy cream {first time using heavy cream!}



Garlic
Onion
Fresh Basil {I only had dry basil}
Olive Oil
Grated Parmesan Cheese
Red pepper flakes
1/4 cup of Vodka
Salt
Pepper
Garlic Powder


1. Start your water boiling for your pasta.
2. Chop the onion and cook in 3 tbsp of olive oil for 5 minutes or until it softens.


3. Add 3 large cloves of garlic and saute for 2 more minutes.
4. While your onion and garlic are cooking, drain your can of diced tomatoes and then add them to the pan.
5. Add 1/4 tsp of red pepper flakes and 1/4 cup of vodka and stir.


{I only needed one of the vodka shots}


6. Let simmer for 10 minutes.
7. By now your water should have come to a boil, so make sure you've added your dry penne pasta.
8. After the tomatoes have simmered, add the cream and stir to heat it completely. Your sauce will now be more of an orange color.
9. Add basil leaves {or dry basil} to your sauce as well. Salt, garlic powder and pepper to taste.


10. Drain your pasta and then put it back into your pasta pot.
11. Add the sauce and stir well
12. Add in a 1/2 cup of grated parmesan and stir until melted
13. Enjoy!

{I am never buying Vodka Sauce from a jar again!}
